Racer_S from ToCA EDIT released a handy tool for Need for Speed Shift, which allows you to change the camera position in realtime.

A real highlight of this tool is the unofficial support for

TrackIR, with which you can look around in your cockpit. You can see in this video a short demo of what is possible:
